TASTING NOTES:

The color starts from ruby red to garnet to indicate the correct maturation of the product. On the nose, it opens slowly towards ethereal and spicy scents with hints of fruit in alcohol. The decisive beginning leaves room for tannins, which are followed by a pleasant acid sensation.

VINIFICATION:

Harvesting takes place at the end of September and is carried out entirely by hand. Fermentation occurs in stainless steel tanks and, after malo-lactic fermentation, the wine is left to rest for at least four months in oak barrels from which it draws its typical woody notes.

Sandan Prosecco Superiore DOCG

TASTING NOTES:

The color is straw yellow with green reflections. The perlage is lively and persistent.

On the nose is delicate, harmonious, with hints of white fruit and cluster flowers.

The flavor is pleasant, full, with balanced sapidity, fresh, caressing, soft.

VINIFICATION:

This Prosecco is obtained from the Glera vine following a careful disciplinary of workmanship that makes it possible to obtain a wine that is suitable to become Prosecco.
The separation takes place through a hyperbaric fermentation to avoid that the wine, which is in an autoclave at 5 atmospheres, has all the phases.
The Prosecco then, after a first natural fermentation common to all wines, undergoes a second one, fermentation…

TASTING NOTES:

The wine has good sapidity. Its brilliant aspect recalls fully the vine. The nose is pleasant with an aroma of mature fruit, especially the marasca. The mouth is warm, very round but it maintains freshness thanks to the acidity. The tannin makes it feel a nice bitterness note. Well balanced it has a good structure.

VINIFICATION:

The pursuit in vinification was to extract the grape’s full potential while remaining true to the delicate character of the varietal type. <br/> Soft pressing and maceration timed to the provenance of each harvest – and making use of “rimontaggi”. After fermentation, the first press joined the “vino-fiore” for secondary fermentation at a maximum temperature of 19 °C.

This fine and balanced Barbaresco DOCG showcases a beautiful red garnet color as it’s first notes highlight hints of dried figs and spices, which subtly fade to a rich mix of berries and vanilla.

VINIFICATION:

These grapes are fermented in stainless steel tubs at a temperature between 82-90°F. The time of maceration is around 10-12 days. After malolactic fermentation, the wine is transferred to medium-sized casks of Slavonic oak for at least two years.

Intense ruby red color. Elegant scent of a beautiful ripe red fruit with floral notes of violet and iris. Lively, balanced, full, intense, and long flavor. It retains its best features for 10-12 years.

VINIFICATION:

in Torraccia’s vineyards, Sangiovese normally reaches its perfect ripeness during the second or third week of September. After harvesting, the Sangiovese and the complementary grapes are fermented together in stainless steel tanks at a controlled temperature at 28-30° C. The contact with the skins continues for about 15-18 days depending on the vintage.

TASTING NOTES:

Barolo DOCG has a garnet color and an intense bouquet of fruit combined with spices. The nose perceives red berries, cherries preserved in spirit and jam, along with roses and withered violets. The scents of cherries in spirit continue on the palate, accompanied by toasted notes, with a nicely persistent finish. In wines originating in some MGA in particular, the scent of spices (cinnamon and pepper, nutmeg, vanilla, and licorice) and balsamic notes are clearly perceived.

VINIFICATION:
